St. Lucian cuisine

Here I present some of the traditional dishes of Saint Lucia:

  • Bouyon: stew made with meat (usually pork), vegetables such as yams, cassava and pumpkin, and spices.
  • Accras: Fried fritters made with cornmeal, salt cod and spices.
  • Breadfruit: A potato-like fruit that is cooked in a variety of ways, such as roasted, fried, or boiled.
  • Callaloo: A thick soup made with taro leaves, okra, onion, garlic, and coconut milk.
  • Pan dulce de coco: a sweet bread made with grated coconut, sugar, flour, and spices.
  • Fish cakes: fried pancakes made with fish, onion, pepper and spices.
  • Fried plantains: Fried plantains, often served as a side dish.
  • Green Plantain Salad: Salad made with green plantain, onion, tomato, bell pepper and vinaigrette.
